A good friend and fellow Chicago pastry chef Thomas Raquel makes an Alfajores cookie that I’ve become addicted to. A traditional cookie of Brazil, Alfajores sandwich a thick layer of dulce de leche between two shortbread cookies. Rather than adding whole cookies, we crushed the shortbread and folded it into a caramelized milk ice cream with a thick ribbon of dulce de leche. I made this sweet treat in honor of Thomas, who is leaving Chicago, but shall forever remain my sweet treat.
